Nov. 20th, 2020 09:07 pmI didn't get out much today. I went to get a haircut--fully masked and sanitized--and was pleased to see my stylist still in good health. She showed me a video on her phone of herself passing out Halloween candy in an inflatable rainbow unicorn costume that was the finest thing I had seen in a long time. I will dwell on it fondly in my memory whenever I need to be cheered up. We should live in a universe where she could transform into a unicorn at will, because she would be perfect.
I got home just in time for our Zoom call with Deb and the Prussian. Right after that, the Sparrowhawk had a call with his friends from high school. I had been planning to make pesto, but realized I didn't have any parmesan cheese. Nor would I really have had enough basil. I was just going to use the tops from the basil plant I brought indoors. It wouldn't have been three cups' worth! I was inclined to give up, but there was a package of shrimp in the freezer that I wanted to use up. I chopped up carrots, red peppers, and cherry tomatoes, and sauteed them with dill. I added the basil right at the end, along with chopped fresh mozzarella I'd been planning to use for a salad, but didn't get around to. While the spaghetti was cooking, I sauteed some mushrooms and then added the shrimp and finished it off with lemon juice and a little white wine. Then I mixed the spaghetti with the vegetables in lieu of a sauce. Pasta is not that great for my stomach, but I'm hoping I can get away with it if I don't add the insult of tomato sauce. The Sparrowhawk had just time to eat his portion before yet another Zoom call--this time, his book club. They had hoped to meet in a garage with the door open and a fire pit for warmth, but one of the group had been exposed to covid and didn't want to risk involving others, so they went virtual.
