So, I heard on the news that our state is getting 500,000 additional doses of vaccine this coming week, which is more than twice as many as the last allotment. This is great! Now that I have mine, I'm rooting for everybody else. It was cold again, but the sun came out for awhile. Again, it was a somewhat sedentary day. I worked on some things, but didn't finish any of them. I can't believe it's March already! She uttered the perennial cry of the migratory Pointy-bird: "I'm not ready!" I made spaghetti and meat sauce for dinner. It was not a thing like the delicious authentic pasta dishes I've been watching Stanley Tucci eat on "Searching for Italy." It was based on a jar of Prego that I was lured into buying because it was so much on sale. Yes, it was too sweet, and bland, with no depth of flavor. I did doctor it up a bit by adding very thinly sliced onions and a yellow pepper, which I sauteed for awhile, and then added a bunch of chopped up cherry tomatoes that were getting old, plus the salvaged remains of a bag of spinach I hadn't got around to yet. Then I put in more oregano, thyme, and basil, and the end of a bottle of cheap Cotes du Rhone. The extra veggies made it much more aromatic and tasty even though it wasn't up to Italian standards. Also we had some steamed broccoli and another chopped salad with avocado and lemon. The lettuce and avocado had also been on sale, and it seemed like a good combo last time.
