Nov. 8th, 2025 09:09 pmI got my x-ray this morning, and the results showed up on my portal this evening. No signs of anything abnormal. That's what I expected, but it's always nice to be told by the experts. When I came home, I made a little trip to the grocery store, somewhat against my will, because there were so many things I could have been doing at home. The wind has helpfully blown a lot of our fallen leaves down the street somewhere, but it also brought down more. Some raking is still needed. However, there were cooked chickens on sale, and I needed something quick for tonight. I made mashed potatoes and green beans before we went to church, so I could quickly warm those and the chicken and make some salad after we got home.
More cooking ensued after dinner. I had this pork butt in the freezer, and felt it needed to be cooked for the potluck tomorrow. Yikes! I had forgotten that it weighed ELEVEN POUNDS. Good grief. Whatever possessed me to lug this monster into my space? I took it out to thaw last night, but it was still frosty today. I used the big knife to cut it into chunks, a difficult process that almost resulted in frostbite! Thank goodness the Sparrowhawk keeps the knives sharp. Then I made a TRIPLE batch of the spice rub and the BBQ sauce that I use for pulled pork. Lucky I'm a ketchup hoarder and had bought a couple of bottles when they were on sale. I coated all the semi-frozen chunks with spice and left them to continue thawing. Hopefully I will pop them into the oven early tomorrow.
