Apr. 2nd, 2023 08:58 pmWe got up kind of late, and I regret to say we just kind of hung around most of the morning. When I finally got going, I made another batch of chicken curry for the potluck tonight. The impetus for this was a mango. They were on sale last time I went shopping, and were irresistibly pretty colors. Mangoes blush through a lovely aurora of dawn colors as they ripen. So I had to use the mango while it was at its peak. It was a bit of a nuisance because the chicken I had was bone-in chicken thighs, so I had to bone them and cut them up. Getting the meat off a chicken thigh bone isn't really one of my specialties. But it was okay because I used the bones to make broth, and I really think that chicken thighs are more flavorful in this dish than the lackluster boneless chicken breast that people always recommend. Last time I made this, I was disappointed in it, although the Sparrowhawk said it was just fine. This time, I was quite pleased. It calls for two tablespoons of curry powder, but I only had one, so I used garam masala. But there wasn't quite enough of that either, so I made up the deficit with turmeric. The spices smelled divine, and the mango was a fine example of why people bother to eat mangoes in the first place. The Sparrowhawk made a pot of rice to go with it. There was nothing left of it at the end of the evening, so winner, winner, chicken (curry) dinner. The thing I love about this recipe is that it has so many aromatic, varied, and colorful ingredients.
